- 30 g Butter
- 100 g Mushrooms (button) finely chopped.
- 1 tbsp Tabasco sauce
- 1 tbsp Thyme leaves dried
- 450 g Sausage meat
- Salt
- Pepper
- 450 g Puff pastry (or create your own, by using our recipe)
- 1 Egg(s) (free range) beaten

Preheat the oven to 200°C (fan 180°C, gas mark 6).

In a large frying pan, melt the butter and fry the mushrooms until they are nice and soft.
For this step you'll need:
- 100g Mushrooms (button) finely chopped.

Transfer the mushrooms to a large bowl, and then add the Tabasco sauce, thyme and sausage meat. Season it well with salt and pepper before thoroughly mixing it together.

- 1 tbsp Tabasco sauce
- 450g Sausage meat
- pinch Salt
- pinch Pepper

Roll out the puff pastry into a large rectangle, and then cut into two long rectangles.

Place a layer of sausage meat mixture down the middle of each rectangle and brush 1 edge of each pastry with the beaten egg.

Fold the other side of the pastry over onto the egg-washed edge. Press down to seal and trim any excess.

Cut each pastry roll into 8-10 small sausage rolls. Place the sausage rolls onto a baking tray and bake in the oven for 15-20 minutes or until crisp and lightly golden with the sausage meat completely cooked through
