For the overnight sponge
- 100 g Strong white bread flour
- 1 tsp Honey
- ½ tsp Easy bake yeast
- 75 ml Warm water
For the loaf
- 245 ml Warm water
- 1 Egg yolk(s) (free range)
- 25 g Butter (unsalted) melted
- 1 tsp Honey
- 2 tsp Salt
- 400 g Very strong white bread flour
- 1¼ tsp Easy bake yeast

Mix the overnight sponge ingredients together to form a smooth dough, cover with a tea towel and leave to ferment for 2 hours.
For this step you'll need:
- 100g Very strong white bread flour
- 1tsp Honey
- ½tsp Easy bake yeast
- 75ml Warm water

Cover with cling film and place in the fridge overnight.

Remove from the fridge the next morning 30 minutes before you want to start making your loaf.

Put the remaining ingredients, together with the overnight sponge, into the bread maker baking pan in the order specified for your particular model (see manufacturer’s handbook).

- 2tsp Salt
- 400g Very strong white bread flour
- 1¼tsp Easy bake yeast

Set to the Normal/Basic White Program for the appropriate size loaf.
