- 250 g Plain wholemeal flour
- 250 g Plain white flour
- 1 tsp Salt
- 1 tsp Bicarbonate of soda
- 1½ tsp Cream of tartar
- 25 g Butter (unsalted)
- 335 ml Buttermilk
- 60 ml Warm water

Preheat the oven to 200°C (180°C fan, gas mark 6). Sift the flour, bicarbonate of soda and cream of tartar into a large bowl, then stir in the salt.
For this step you'll need:
- 250g Plain white flour
- 250g Plain wholemeal flour
- 1tsp Bicarbonate of soda
- 1½tsp Cream of tartar

Lightly rub in the butter until the mixture resembles breadcrumbs.
For this step you'll need:
- 25g Butter (unsalted)

Make a well in the centre and gradually add the buttermilk and enough of the water to form a soft dough
For this step you'll need:
- 335ml Buttermilk

Turn the dough onto a floured surface and knead lightly, then shape into a 20cm round. Place on a baking sheet and, using a sharp knife, mark a deep cross on the top.

Bake the loaf for 30 minutes or until risen and golden brown. Cool on a wire rack. Serve warm or cold.
