Ingredients
For the cake
- 250 g Butter (unsalted) softened
- 250 g White caster sugar
- 5 Egg(s) (free range) large
- 1 tsp Vanilla extract
- 15 ml Milk
- 250 g Self-raising white flour
- 1 tsp Baking powder
For the icing
- 100 g Butter softened
- 400 g Icing sugar
- 1 tsp Vanilla extract
- 100 g Dessicated coconut
- 50 g White sugar paste icing
- Red food colouring
- Jelly sweets

Preheat the oven to 170°C (fan 150°C, gas mark 5). Grease and line 2 x 7 inch round sponge tins.

Add the caster sugar to the softened butter and using a wooden spoon, or an electric hand held whisk, beat the butter and sugar until it is really smooth and creamy.
For this step you'll need:

Beat the eggs together lightly with a fork, then add a drop at a time to the butter and sugar mixture, beating really well until smooth.
For this step you'll need:
- 5 Egg(s) (free range) large

Using a large metal spoon fold in the vanilla extract, milk, baking powder and flour, lifting the mixture in a figure of eight to scoop up the flour and fold it in.
For this step you'll need:
- 1tsp Vanilla extract
- 1tsp Baking powder
- 250g Self-raising white flour
- 15ml Milk

Divide the mixture evenly between the two cake tins. Bake for about 20-25 minutes until the mixture is golden and just firm in the centre. Allow to cool for five minutes then remove from the tin and allow to cool completely

To make the icing beat the butter and sugar together until smooth, adding a little hot water if liked to help soften it and make a soft smooth consistency.
For this step you'll need:
- 100g Butter (unsalted) softened
- 400g Icing sugar

To assemble using a tea plate or saucer as a guide, cut one of the sponge cakes into a smaller circle for the head. Place this against the snowman body to form the shape of a snowman.

Coat the whole cake with butter cream. Sprinkle with coconut.

Mix a little red colouring into the sugar paste. Roll out most of it to make the scarf and then make a mouth with the rest. Use jelly sweets to make the eyes, nose and buttons.
