    Carefully melt the chocolate in a heat proof bowl over a pan of simmering water. Then dip one half of each biscuit into the melted chocolate.

    For this step you'll need:

    • 150g Dark chocolate
    • 24 Shortbread biscuits

    Drain the excess chocolate then lay the biscuits on baking parchment to cool and set.

    Next make the marshmallow filling by placing the sugar and water in a medium saucepan and gently heat until the sugar has dissolved. Do not stir.

    For this step you'll need:

    • 220g White caster sugar
    • 80ml Water

    Then bring the syrup to a boil and simmer for about 10-15 minutes until the temperature on the sugar thermometer reads 116C.

    Remove from the heat and allow the bubbles to subside. Next whisk the egg whites until they reach the soft peak stage, then still whisking pour the syrup into the egg whites and continue whisking for about 10 minutes until the frosting is thick and cool.

    For this step you'll need:

    • 2 Egg white(s) (free range) medium

    Finally make up the S’Mores by taking a biscuit, spooning some marshmallow frosting onto it then place another biscuit on top pressing down slightly so the filling spreads out. Repeat for the other biscuits.
