For the blini
- 70 g Plain wholemeal flour
- 70 g Plain white flour
- 1 tsp Baking powder
- 175 ml Milk (whole) warmed
- 1 Egg(s) (free range) seperated
- 100 g Butter (unsalted)
- 1 tsp Easy bake yeast
For the topping
- 200 g Cream cheese
- Smoked salmon
- Dill

Sieve the flours and baking powder together into a bowl.
For this step you'll need:
- 70g Plain white flour
- 70g Plain wholemeal flour

Add the yeast to the warmed milk and then separate the egg, adding the egg yolk in with the yeast and milk.
For this step you'll need:
- 1tsp Easy bake yeast
- 175ml Milk (whole) warmed
- 1 Egg(s) (free range) seperated

Whisk the milk and egg mixture into the dry ingredients to make a smooth batter. Add 1 tsp of melted butter and stir until combined.
For this step you'll need:
- 100g Butter (unsalted)

Whisk the egg whites until they are stiff, then gently fold into the batter, trying to keep as much volume as possible.

Clarify the rest of the butter by gently melting it in a pan, then pour off the clear yellow liquid into a jug and discard the white bit left behind in the pan.

Heat some of the clarified butter in a frying pan and drop in dessert spoonfuls of batter. Cook until the surface starts to bubble, then flip over and cook the other side.

Cool, then serve with smoked salmon and cream cheese (or creme fraiche if preferred). Sprinkle with dill.
