- 120 g Plain white flour
- Salt
- ½ tsp Baking powder
- 25 g Lard
- 30 g Currants
- 3 tbsp Milk (whole)
- 1 tbsp Lemon juice
- Butter (salted) to serve
- Honey to serve

Put the flour, salt and baking powder into a bowl and rub in the butter and lard to make fine breadcrumbs. Stir in the currants.
For this step you'll need:
- 120g Plain white flour
- Salt

- 30g Currants

Mix together the milk and lemon juice and pour gradually into the dry ingredients, stirring first with a butter knife and the with your hands, to make a soft but not sticky dough.
For this step you'll need:
- 3 tbsp Milk (whole)
- 1 tbsp Lemon juice

Roll into one 18cm wide circle and cut into quarters to make it easier to handle.

Heat a heavy bottomed frying pan to medium hot and cook the singing hinnys for a couple of minutes each side, until golden brown and firm.

Serve immediately spread with butter and honey if you wish.
