For the base
- 300 g Digestive biscuits
- 75 g Butter (unsalted)
For the filling
- 5 Lime zest finely grated
- 5 Lime juice
- 400 g Condensed milk
- 300 ml Double cream
For the decoration
- 3 tbsp Chocolate curls

To make the base, place the biscuits in a plastic bag and bash with a rolling pin to make fine crumbs. Melt the butter in a pan and stir in the biscuits.
For this step you'll need:
- 300g Digestive biscuits
- 75g Butter (unsalted)

Press the mixture into a 20cm loose bottomed, greased flan tin and up the sides, pressing well with the back of a spoon. Leave the base to chill in the fridge.

Using a zester, pare the rind from 1 lime into strips and set aside for the decoration. Grate the remaining lime zest and squeeze all the juice. Place the juice in a mixing bowl with the condensed milk and cream and whisk until thickened. Stir in the grated lime zest then spread the mixture into the biscuit base. Chill for at least 1 hour.

Decorate with the remaining lime zest and the chocolate curls. This pie will keep for 2-3 days in the fridge or can be frozen.
