    On the hob, slowly melt the caster sugar in a pan over a medium heat until dark amber. Take off the heat and carefully add the orange juice and rum, Return to the heat and stir until the caramel melts again. Cool and set aside until needed.

    For this step you'll need:

    • 100g Unrefined golden caster sugar plus extra for dusting
    • 4 tbsp Orange juice
    • 3 tbsp Dark rum

    Cut the pineapple into quarters, dip each cut side in caster sugar. Cook over a hot barbecue until just golden. Serve with the rum sauce poured over. Delicious with ice cream

    • 1 Pineapple quartered
