    Preheat the oven at 180°C (160°C fan, 350°F, gas mark 4). Draw an 8 cm circle onto a piece of card (use a cup or a pastry cutter as a guide) then using a smaller cutter, draw 2 smaller circles on top to make ears. Cut out the panda head shape.

    Grate the lemon zest and squeeze 1 tbsp lemon juice.

    Place the lemon zest, butter, sugar and flour in a food processor and blend until it makes fine crumbs, add the egg yolk and lemon juice (you may not need to use the full amount) and blend again for a few seconds. Gather the mixture into a ball and chill if necessary.

    For this step you'll need:

    • 100g Butter (unsalted)
    • 100g Unrefined golden caster sugar
    • 175g Plain white flour
    • 1 Egg yolk(s) (free range)

    Roll the dough on a work surface lightly dusted with flour, to a thickness of a £1 coin.  Cut out the panda head shapes using the template and place on a baking tray. Re-roll the remaining dough and repeat the process. Bake cookies for 14-15 minutes until just golden at the edges, allow to cool for 10 minutes before removing from the baking tray to cool.

    Mix the royal icing sugar with a few drops to make a soft icing and fill a piping bag with a small piping nozzle. You may want to test the consistency by piping a few strings of icing on to your worktop.

    Hold the piping bag about 1/2″ away from your cookie and pipe the icing around the outline of the panda head shape. Leave the icing to set hard.

    Mix together royal icing sugar with water to make a runnier consistency, this will be used to flood the cookies. Fill a piping bag and gently cover the cookies with the white icing. Leave to set.

    When the white icing is dry, use the black designer icing to pipe the ears, eyes and mouth. Use chocolate sweets for the centre of the eyes and nose.
