For the pancake
- 120 g Plain white flour
- Salt
- 2 Egg(s) (free range) medium
- 300 ml Milk (whole)
- Vegetable oil for frying
For the filling
- 200 g Brie sliced
- 100 g Ham sliced
- Rocket leaves, a handful of
- Cheddar cheese grated, a handful of

Whisk the flour, eggs and milk together to form a batter, whisking until there are no lumps. Leave to stand for about 30 minutes.
For this step you'll need:
- 120g Plain white flour
- 2 Egg(s) (free range) medium
- 300ml Milk (whole)

Lightly grease a frying pan with oil and heat until hot, then spoon 2 tablespoon of the batter into the pan and swirl to coat the base of the pan with batter. Cook for 1-2 minutes on each side or until golden.
For this step you'll need:
- Vegetable oil for frying

Transfer to a plate and keep warm whilst you make the rest.

For the filling place a slice of ham onto the pancake then some slices of brie on top, sprinkle some rocket on top then fold over and place on a baking tray. Repeat with the other pancakes, then finally sprinkle over some grated cheddar cheese and place under the grill until the cheese has melted.
