- 1 tsp Coriander seeds
- 1 tsp Cumin seeds
- ½ tsp Fennel seeds
- 8 Nectarine(s) slightly under ripe and cut into 1.5cm chunks
- 2 Red onion chopped
- ½ tbsp Rosemary chopped
- 5 tbsp Unrefined golden granulated sugar
- 4 tbsp White wine vinegar

Place the coriander, cumin and fennel seeds in a pestle and mortar and grind to a quite a fine powder.
For this step you'll need:
- 1tsp Coriander seeds
- 1tsp Cumin seeds
- ½tsp Fennel seeds

Add to a non stick saucepan with the remaining ingredients and 200ml (7 fl oz) water. Slowly bring to the boil, allowing the sugar to dissolve and boil for 20-25 minutes, stirring occasionally until most of the liquid has evaporated and the relish has thickened
For this step you'll need:

Allow to cool and serve with a strong cheddar cheese, hams or pates. The relish can be stored in an airtight container in the refrigerator for 2 weeks.
