- 135 g Butter (unsalted)
- 85 g Unrefined light muscovado sugar
- 85 g Unrefined golden caster sugar
- 1 Egg(s) (free range) medium
- ½ tsp Vanilla extract
- 190 g Plain white flour
- Salt
- 1 tsp Bicarbonate of soda
- 120 g Dark chocolate chips

Preheat the oven to 170°C, (fan 150°C, gas mark 3) and line 2 baking trays with baking parchment.

In a large bowl cream together the butter and sugars until pale and fluffy then add the egg and vanilla extract and mix together well.
For this step you'll need:
- 135g Butter (unsalted)
- 85g Unrefined light muscovado sugar
- 85g Unrefined golden caster sugar
- 1 Egg(s) (free range) medium
- ½tsp Vanilla extract

Sift the flour, salt and bicarbonate of soda and add to the egg mixture in two batches, mixing thoroughly until a soft dough forms. Finally stir in the chocolate chips.
For this step you'll need:
- 190g Plain white flour
- pinch Salt
- 1tsp Bicarbonate of soda
- 120g Dark chocolate chips

Break off small pieces of the dough, and roll into balls about 1 inch round. Place these on the baking sheets leaving space between them as they will spread out during baking.

Place in the oven and bake for 10-15 minutes until they are light golden in colour. Leave to cool on the trays for about 10 minutes then transfer onto a cooling wire to cool completely.
