- 150 g Butter (unsalted) softened
- 150 g Unrefined golden caster sugar
- 3 Egg(s) (free range) beaten
- ½ tsp Vanilla extract
- 175 g Self-raising white flour
- 1 tsp Baking powder
- 30 ml Milk (whole)

Preheat the oven to 200°C (180°C fan, 400°F, gas mark 6). Grease a 15cm/6in square cake tin.

In a large bowl, beat the butter and sugar until light and fluffy. Gradually add in the egg .
For this step you'll need:
- 150g Butter (unsalted) softened
- 150g Unrefined golden caster sugar
- 3 Egg(s) (free range) beaten

Sift the flour and baking powder together and fold into the mix to make a soft mixture, add in the vanilla extract and gradually add the milk.
For this step you'll need:
- 175g Self-raising white flour
- 1tsp Baking powder
- ½tsp Vanilla extract
- 30ml Milk (whole)

Spoon the mixture into the tin and bake for 30-35 minutes, or until springy to the touch. Leave to cool on a wire rack.
