For the biscuits
- 250 g Plain white flour
- 75 g Almonds (ground)
- 2 tsp Ginger (ground)
- 1 tsp Cinnamon
- Cloves (ground)
- Nutmeg (ground)
- 2 tsp Cocoa powder
- 1 tsp Baking powder
- 1 tsp Bicarbonate of soda
- 200 g Honey
- 75 g Butter (unsalted)
- 100 g Mixed peel
For the topping
- 100 g Icing sugar
- 100 g Plain chocolate (70% cocoa)
- 3 tsp Water

Weigh out the flour, almonds, spices, cocoa powder, bicarbonate of soda and baking powder into a medium bowl.
For this step you'll need:
- 250g Plain white flour
- 75g Almonds (ground)
- 2tsp Ginger (ground)
- 1tsp Cinnamon
- pinch Cloves (ground)
- pinch Nutmeg (ground)
- 2tsp Cocoa powder
- 1tsp Baking powder
- 1tsp Bicarbonate of soda

Melt the honey and butter in a pan over a low heat until the butter melts, then pour it over the flour and spice mixture. Mix well until the dough is combined and fairly stiff. Cover and leave to cool for 30 minutes.
For this step you'll need:
- 200g Honey
- 75g Butter (unsalted)

Heat oven to 180°C (fan 160°C, gas mark 4).

Shape the dough into about 20 fat golf ball sized balls. Place on baking trays lined with baking parchment, leaving room for them to expand. Flatten each one to make a round biscuit about 1 cm thick. Bake for 15 minutes until just tinged brown on the edges, then cool on a wire rack.

Mix the icing sugar with a few teaspoons of water until you have a smooth, runny consistency. Dip the top of half of the biscuits in the icing and leave to set.

- 100g Icing sugar
- 3tsp Water

Melt the chocolate in a microwave on medium power for 1 minute, or until melted. Dip the top of the remaining biscuits in the chocolate then leave to set.

- 100g Plain chocolate (70% cocoa)
