For the marinade
- 2 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- 1 tbsp Cider vinegar
- 2 tbsp Unrefined molasses sugar
- 3 Garlic clove(s) peeled and crushed
- 2 Shallot(s) peeled and sliced
- Salt
- Black pepper
- 700 g Lamb leg steaks, cut into 3cm cubes
For the greek salad
- 1 Red onion
- 3 Tomato(es) quartered
- ½ Cucumber cubed
- 100 g Olives
- Lettuce leaves
- 4 tbsp Olive oil
- 2 tbsp Parsley chopped

Mix together the olive oil, vinegars, molasses, garlic and shallots. Season to taste. Pour into a shallow dish and add the lamb. Toss gently and leave to marinade for at least 30 minutes or up to 3 hours.

Place the red onion, tomatoes, cucumber, feta and olives in a bowl. Drizzle with the olive oil, season, then toss well with the little lettuce leaves. Serve in a large salad bowl topped with chopped fresh flat-leaf parsley

Thread onto 8 skewers and cook for 8-10 minutes under a medium-hot preheated grill or on the barbecue, turning from time to time, until browned but still slightly pink in the centre. Brush with the marinade as you cook.

Serve the lamb skewers along side the greek salad.
