- 300 g Dried mixed fruits
- 100 g Glace cherries
- 300 ml Tea hot, strong
- 125 g Unrefined light muscovado sugar
- 125 g Unrefined dark muscovado sugar
- 1 Egg(s) (free range) large, beaten
- 275 g Self-raising white flour
- 1 tsp Mixed spice
- Butter (salted) to serve

Put the dried mixed fruit and cherries into a large bowl and pour over the hot tea and leave overnight.
For this step you'll need:
- 300g Dried mixed fruits
- 100g Glace cherries
- 300ml Tea hot, strong

The next day, preheat the oven to 180C (fan 160C, gas mark 4) and line a 900g loaf tin with baking paper. Ready made liners for loaf tins are available in larger supermarkets.

Add the remaining ingredients to the soaked fruit and tea and stir well.
For this step you'll need:
- 125g Unrefined light muscovado sugar
- 125g Unrefined dark muscovado sugar
- 1 Egg(s) (free range) large, beaten
- 275g Self-raising white flour
- 1tsp Mixed spice

Pour into the loaf tin and bake for 1 1/2 hours or until a skewer comes out clean when pushed into the middle. After an hour just check as you might want to cover with foil if browning too much.

Leave to cool in the tin and then serve sliced with butter.
