For the biscuits
- 325 g Plain white flour
- 200 g Butter (unsalted) chilled
- 125 g Unrefined golden caster sugar
- 2 tsp Vanilla extract
- 2 Egg yolk(s) (free range)
To decorate
- 1 tbsp Apricot jam warmed and sieved
- 250 g Sugar paste icing
- Food colouring pink, blue, purple, yellow, green
- Sweets
- Designer icing (white) mixed colours

Preheat the oven to 180°C (160°C fan, gas mark 4). Lightly grease 2-3 baking trays.

Place the butter, flour and sugar in a food processor and blend until it makes fine crumbs. Add the egg yolks and continue to blend until the mixture clumps together. Alternatively, if you are making the recipe by hand, rub the butter into the flour until it forms bread crumbs, then stir in the sugar and egg yolks and beat with a wooden spoon until it forms a dough.
For this step you'll need:
- 200g Butter (unsalted) chilled
- 325g Plain white flour
- 125g Unrefined golden caster sugar

Turn out onto a lightly floured work surface and knead lightly into a ball. Wrap in cling film and chill for 30 mins.

Roll the mixture out on a lightly floured work surface, then using cutters cut out your shapes, letters or words.

Bake for 10-15 mins depending on size and thickness, or until just pale golden. Allow to cool for 10 mins on the baking trays then cool completely. If liked, sandwich the biscuits together with jam or buttercream and dust them with a little icing sugar.

Divide the sugar icing into portions and add a drop of food colouring to each and knead until the colour is even. Wrap the icings tightly in cling film to prevent drying.
For this step you'll need:
- 250g Sugar paste icing
- Food colouring pink, blue, purple, yellow, green

When you are ready to begin decorating dust the work top with a little icing sugar and roll out the coloured icing thinly. Using the same cutters that you used for the biscuits cut out the icing into shapes.

Before laying the icing on the biscuit spread very thinly with a little of the warm apricot jam to allow the icing to stick.

- 1 tbsp Apricot jam warmed and sieved

To finish decorate the iced biscuits with sweets, securing each in place with a dot of writing icing. You could also pipe an easter message into your biscuits or use the coloured writing icing or decorate them.
