Ingredients
- 1⅞ kg Gooseberries
- 240 ml Water
- 3 kg White granulated sugar
- 250 ml Apple pectin

Top, tail and wash the gooseberries. Put the gooseberries in a pan with the water, bring to the boil and simmer covered for 15 minutes or until the skins are soft, stirring occasionally.

- 1⅞kg Gooseberries
- 240ml Water

Add the sugar and heat slowly until the sugar has dissolved stirring occasionally.
For this step you'll need:
- 3kg White granulated sugar

Bring quickly to a full rolling boil and boil rapidly for 2 minutes stirring occasionally.

Remove from the heat and stir in apple pectin – skim if necessary
For this step you'll need:
- 250ml Apple pectin

Allow to cool slightly, pot and cover in the usual way.
