Ingredients
- 450 g Gooseberries
- 5 tsp Unrefined golden caster sugar
- 1 tbsp Elderflower cordial
- 300 ml Double cream

Wash, then top & tail the gooseberries. Put them in a large saucepan with the sugar, elderflower cordial and a splash of water.
For this step you'll need:
- 450g Gooseberries
- 5tsp Unrefined golden caster sugar
- 1 tbsp Elderflower cordial

Bring the fruit to the boil and simmer for 10 minutes.

Cool, then continue to chill in the fridge. When fully chilled crush the fruit with a fork.

Whip the double cream until soft folds form, then fold in the fruit and serve.
