- 1 Onion(s) large, finely chopped
- 2 tbsp Unrefined dark muscovado sugar
- 50 g Goats' cheese roulade
- 110 g Butter (unsalted)

Preheat oven to 180°C (fan 160°C, gas mark 4) Prepare two muffin tins.

In a large frying pan, melt a couple of knobs of butter, add the dark muscovado sugar and fry the onions on a low heat for approximately 20 minutes until caramelized.
For this step you'll need:
- 2 tbsp Unrefined dark muscovado sugar
- 30g Butter (unsalted)
- 1 Onion(s) large, finely chopped

Melt the remaining butter and lightly brush over the pastry, before slicing into approximately 6cm squares.
For this step you'll need:
- 70g Butter (unsalted)
- 6 Filo pastry sheet(s)

Double up the squares and push them into the holes in the muffin tin.

Before filling the pastry cases your will need to bake for 4 minutes in the oven or until golden.

Once baked spoon in a layer of the fried onions, top with some goats cheese and pop back in the oven for a few minutes until the cheese begins to melt (be careful not to let the pastry burn).

Remove the tartlets from the oven and chop the figs into quarters.

Finish the tartlets with a slice of fig and a drizzle of honey if liked.
