For the fairy cakes
- 200 g Butter (unsalted)
- 200 g Unrefined golden caster sugar
- 3 Egg(s) (free range)
- 1 tsp Vanilla extract
- 200 g Self-raising white flour
- ½ tsp Baking powder

Preheat the oven to 180°C (170°C fan, gas mark 5). Line a cupcake tin with cake cases, if you have no cake cases, grease and flour the individual holes.

Beat together the butter, sugar, eggs and vanilla extract until the mixture is smooth.
For this step you'll need:
- 50g Butter (unsalted)
- 200g Unrefined golden caster sugar
- 3 Egg(s) (free range)
- 1tsp Vanilla extract

Sift the flour into the bowl with the baking powder. Stir in until well blended. Spoon the mix into the cake cases, if using.
For this step you'll need:
- 200g Self-raising white flour
- ½tsp Baking powder

Bake for 12-15 minutes until a skewer comes out clean when inserted. Cool on a rack before decorating.

To make the icing, cream the butter and sugar until fluffy and pale, add a drop of milk if needed. Add the colouring as required and spoon or spread onto the fairy cakes with a palette knife.

- 200g Unrefined golden icing sugar
- Food colouring
