- 125 g Unrefined golden caster sugar
- 125 g Butter (unsalted)
- 1 tsp Vanilla extract
- 200 g Plain white flour
- 100 g Almonds (ground)
- ½ tsp Baking powder
- 4 Egg(s) (free range) Large
- 300 g Strawberries cut in half
- 3 Meringue nests broken

Preheat the oven to 180°C (fan 160°C, gas mark 4). Line a baking tray (33cm x 18cm approx) with greaseproof paper.

Cream the butter and sugar together. Beat in the eggs and vanilla extract, until mix is light and creamy.

- 125g Butter (unsalted)

- 4 Egg(s) (free range) Large
- 1tsp Vanilla extract

Fold in the sifted flour, baking powder and ground almonds. Spoon the mixture into the prepared tin.

- 200g Plain white flour
- ½tsp Baking powder
- 100g Almonds (ground)

Lay the strawberries cut side down into the mixture along with the broken meringue nests.
For this step you'll need:
- 300g Strawberries cut in half
- 3 Meringue nests broken

Bake for 35 minutes until golden brown or until a skewer inserted comes out clean.

Allow to cool and then cut into 12 portions and serve on its own or with cream.
