For the cobbler
- 750 g Damson(s) stoned
- 75 g Unrefined golden granulated sugar
- 250 g Self-raising white flour
- 1 tsp Salt
- 1 tsp Baking powder
- 50 g Butter diced
- 100 ml Milk
For the glaze
- 1 tbsp Milk
- 1 tbsp Unrefined golden granulated sugar

Pre-heat the oven to 180°C (fan 170°C, gas mark 4).

Mix the stoned fruit with a tablespoon of the sugar in a pan set over a medium heat and cook until the sugar has dissolved and the fruit has softened a little, about 5 minutes.

- 1 tbsp Unrefined golden granulated sugar

Meanwhile, put the remaining sugar in a bowl with the flour, salt and baking powder. Mix well and add the butter.

Crumble between the tips of you fingers, and stir in the milk. The dough should just come together in the bowl, but not drop from the spoon.

- 100ml Milk

Spoon the fruit into an ovenproof dish. Spoon the cobbler dough over the surface of the fruit. Brush with milk and sprinkle with the remaining sugar.

- 1 tbsp Unrefined golden granulated sugar
