- 1 kg Tomato(es) fresh
- 2 Garlic clove(s)
- 1 Red pepper diced
- ½ Cucumber de-seeded and diced
- 2 White bread slices cut into squares
- 2 tbsp Mint leaves chopped
- 125 g Red wine vinegar
- 3 tsp Half Spoon granulated sugar
- 125 ml Olive oil

Cut a small cross in the bottom of the tomatoes and place in a bowl of boiling water. Leave for 7-9 minutes. Drain and then plunge into cold water. Peel the skins off the tomatoes. Cut into cubes and place in a mixing bowl with the garlic, peppers and cucumber.

Add the bread, mint, vinegar, sugar and olive oil. Cover and chill for about 1 hour or preferably over night. Taste and adjust the taste with sugar. Serve with pitta bread.
