For the pancakes
- 120 g Plain white flour
- 1 tsp Baking powder
- Salt
- 2 tbsp Unrefined light muscovado sugar
- 1 tsp Cinnamon stick(s)
- 350 ml Buttermilk
- 50 g Butter (unsalted) melted
- 1 Egg(s) (free range) beaten
For the topping
- Vegetable oil for frying
- 8 Bacon rasher(s)
- 4 tbsp Maple syrup

Sieve the flour, baking powder, salt and cinnamon into a large bowl then add the sugar and stir then make a well in the centre.
For this step you'll need:
- 120g Plain white flour
- 1tsp Baking powder
- pinch Salt
- 2 tbsp Unrefined light muscovado sugar

In a large jug whisk together the buttermilk, melted butter and beaten egg.
For this step you'll need:
- 350ml Buttermilk
- 50g Butter (unsalted) melted
- 1 Egg(s) (free range) beaten

Slowly add the wet ingredients to the dry, whisking until you have added it all and you get a smooth, thick batter. Leave to rest for 10-15 minutes.

Lightly grease a frying pan with oil and heat on a medium heat, then scoop a rounded tablespoon of batter into the pan. Cook for 1-2 minutes on each side or until golden. The pancakes will start to puff up as they cook.

Transfer to a plate and keep warm whilst you make the rest.

Fry or grill the bacon until crispy, then serve with the pancakes and finish with a drizzle of maple syrup.
