- 3 Bramley apple(s) cooking
- 1 tbsp Lemon juice
- 225 g Butter (unsalted) softened
- 4 Egg(s) (free range) medium
- 350 g Self-raising wholemeal flour
- 2 tsp Baking powder
- 225 g Unrefined golden caster sugar
- Unrefined demerara sugar to sprinkle

Preheat the oven to 180°C (160°C fan, 350°F, gas mark 4). Grease and line a rectangular 27cm x 20cm baking tin with parchment paper.

Peel, core and slice the apples into a bowl. Add the lemon juice and set aside until ready to use.

- 1 tbsp Lemon juice

Place the butter, caster sugar, eggs, flour and baking powder into a large bowl and beat until smooth and fluffy.
For this step you'll need:
- 225g Butter (unsalted) softened
- 225g Unrefined golden caster sugar
- 4 Egg(s) (free range) medium
- 350g Self-raising wholemeal flour
- 2tsp Baking powder

Spoon half the cake mixture into the prepared tin and top with the apples. Spoon
over the remaining mixture. -

Sprinkle with the demerara sugar. Bake for 45-50 minutes until golden brown and springy to the touch. Leave to cool before turning on to a cooling rack and cutting into squares to serve.

- Unrefined demerara sugar to sprinkle
