Ingredients
For the compote
- 1 Lemongrass
- 40 g Unrefined golden granulated sugar
- 300 g Blueberries
- 1 tbsp Water

Halve the lemongrass lengthways and bruise with a rolling pin so the flavours are released during cooking.
For this step you'll need:
- 1 Lemongrass

Put the sugar, blueberries, lemongrass and water in a saucepan and cook over a low heat until the blueberry colour begins to run and the sugar has dissolved.
For this step you'll need:
- 40g Unrefined golden granulated sugar
- 300g Blueberries
- 1 Lemongrass
- 1 tbsp Water

Remove from the heat and allow to cool. Remove the lemongrass.

Spoon the yoghurt into four dishes and top with the compote to serve.
