- 1½ kg Blackberries
- 1½ kg White granulated sugar
- 120 ml Water
- 250 ml Apple pectin
- 1 Lemon(s) juice from

Place the blackberries, water and lemon juice in a preserving pan, bring to the boil. Add the apple pectin then simmer and a low heat for 20 minutes.
For this step you'll need:
- 1½kg Blackberries
- 120ml Water
- 1 Lemon(s) juice from
- 250ml Apple pectin

Tip the mixture into a jelly bag and leave to drip overnight.

Add the water or enough water to make two pints of liquid mixture. Place back in the preserving pan with the sugar and heat over a low heat until all the sugar has dissolved, approximately 10-15 minutes.

- 120ml Water
- 1½kg White granulated sugar

Skim any scum from the top of jelly and fill sterilised jam jars. Cover, seal and label.
