For the biscuits
- 280 g Plain white flour
- 200 g Butter (unsalted) diced
- 100 g Unrefined golden icing sugar
- 2 Egg yolk(s) (free range)
For the decoration
- 250 g Fondant icing sugar
- 45 ml Warm water
- Sprinkle decorations

Preheat the oven to 200°C (180°C fan, gas mark 6).

Place the flour and butter in a bowl and rub together with your hands until it makes crumbs.
For this step you'll need:
- 280g Plain white flour
- 200g Butter (unsalted) diced

Stir in the icing sugar then add the egg yolks and start squeezing the mixture together until it all binds to a dough
For this step you'll need:
- 100g Unrefined golden icing sugar
- 2 Egg yolk(s) (free range)

Roll out on a lightly floured worksurface and cut into about 20 stars about 8-9 cm across at widest point.

Place on a baking sheet and carefully push a lolly pop stick through the thickness of the dough Bake for 6-8 mins until just turning golden brown at the edges.

Allow to cool then ice the biscuits with glacé or fondant icing and sugar sprinkles.

- Sprinkle decorations

To make the swirl effects, add a small amount of soft, smooth jam or different colour icing to the centre of the biscuit, whilst the fondant icing is still wet. Lightly drag a cocktail stick through the icings to give the swirl effect.
