Ingredients
- 100 g Bacon rasher(s)
- ½ Onion(s) chopped
- 450 g Very strong white bread flour
- 1 tsp Unrefined golden granulated sugar
- 1 tsp Salt
- 1 Easy bake yeast sachet (7g)
- 1 tsp Nutmeg grated
- 100 g Spinach roughly chopped
- 15 ml Olive oil
- 150 ml Warm water
- 50 g Cheddar cheese grated

Fry the bacon and onion for 5 minutes. Allow to cool and cut up the bacon into small pieces.
For this step you'll need:
- 100g Bacon rasher(s)
- ½ Onion(s) chopped

Place all of the ingredients (except cheddar cheese) into a mixer with a dough hook attached. If mixing by hand put the flour, bacon, onion, spinach, sugar, salt and nutmeg into a bowl. Add the yeast and mix to a soft dough with the water and oil.
For this step you'll need:
- 450g Very strong white bread flour
- 1tsp Salt
- 1 Easy bake yeast sachet (7g)
- 1tsp Nutmeg grated
- 100g Spinach roughly chopped
- 15ml Olive oil
- 150ml Warm water

Mix to a soft dough and knead for 5 minutes or 10 minutes if you have mixed by hand.

Shape into a round loaf and score into 8 sections.

Cover with oiled cling film and leave to prove in a warm place until doubled in size. Meanwhile preheat the oven to 220°C (fan 200°C, gas mark 7).

Sprinkle the loaf with the grated cheese and place in the oven, reducing the temperature to 200°C (fan 180°C, gas mark 6). Bake for 25-30 mins or until the loaf sounds hollow when the bottom is tapped.
