- 450 g Onion(s) finely chopped
- 300 ml Vinegar malt
- 900 g Apple(s) cooking, peeled and cored
- 2 tsp Cardamom pods crushed
- 350 g Unrefined light muscovado sugar
- 110 g Dried apricots roughly chopped
- Salt
- Pepper

Put the onions and half the vinegar into a large pan and bring to the boil. Simmer gently for 10 minutes.
For this step you'll need:
- 450g Onion(s) finely chopped
- 150ml Vinegar malt

Cut the apples into small pieces and add to the pan with the remaining vinegar, cardamom, sugar, apricots and a sprinkling of salt and pepper. Stir over a low heat until the sugar has dissolved completely, then increase the heat and simmer steadily, stirring occasionally until the mixture is very thick.
For this step you'll need:
- 900g Apple(s) cooking, peeled and cored
- 150ml Vinegar malt
- 2tsp Cardamom pods crushed
- 350g Unrefined light muscovado sugar
- 110g Dried apricots roughly chopped
- Salt
- Pepper

Spoon into hot sterilised jars, seal and label. Leave to mature in a cool dark cupboard for up to 3 months.
