- 325 g Plain white flour
- 200 g Butter (unsalted) chilled
- 125 g Unrefined golden caster sugar
- 2 tsp Vanilla extract
- 2 Egg yolk(s) (free range) large
- Icing sugar to dust

Set the oven to 180°C (fan 160°C, gas mark 4). Lightly grease 2-3 baking trays.

Rub the butter into the flour until it forms bread crumbs, then stir in the vanilla extract, sugar and egg yolks and beat with a wooden spoon until it forms a dough.
For this step you'll need:
- 200g Butter (unsalted) chilled
- 325g Plain white flour
- 125g Unrefined golden caster sugar
- 2tsp Vanilla extract
- 2 Egg yolk(s) (free range) large

Turn out onto a lightly floured work surface and knead lightly into a ball. Wrap in cling film and chill for 30 minutes.

Roll the mixture out on a lightly floured work surface, then using cutters cut out your letters or words. To make the jam hearts, cut out two equal sized hearts, then use a smaller cutter to cut a small heart out of the centre of one of them and fill with jam.

Bake for 10-15 minutes depending on size and thickness, or until just pale golden. Allow to cool for 10 minutes on the baking trays, then cool completely on a wire rack. Dust with icing sugar or ice with royal icing.
