- 3 Egg(s) (free range) large, free range
- 170 g Butter (unsalted)
- 170 g Unrefined golden caster sugar
- 170 g Self-raising white flour plus a little for dusting the fruit
- 100 g Sultanas
- 1 tbsp Mixed spice
- 1 tsp Cinnamon

Pre-heat oven to 200°C (fan 180°C, gas mark 6). Grease a large loaf tin with butter.

Cream the butter, then add the sugar and beat until fluffy.
For this step you'll need:

- 170g Unrefined golden caster sugar

Beat the eggs together in a jug and add to the sugar/ butter. Beat together until smooth.

Add the mixed spice and cinnamon and stir together. Add the flour and mix until smooth.
For this step you'll need:
- 1 tbsp Mixed spice
- 1tsp Cinnamon
- 170g Self-raising white flour plus a little for dusting the fruit

Dust the sultanas in a bowl with about 1 tbsp of flour until all the fruit is well coated. Add the fruit to the mixture and stir in.

Pour the mixture into the tin and bake for 45 minutes. Test with a skewer, if still sticky in the middle bake for 5 more minutes or just until the skewer comes out clean. Dust with icing sugar before serving.
