- 4 Egg white(s) (free range)
- 225 g Unrefined golden caster sugar
- 500 g Strawberries fresh, chopped
- 225 g Double cream whipped
- Icing sugar to dust

Preheat the oven to 110°C (90°C, gas mark 1/4)

Put the egg whites into a clean glass bowl and whisk with an electric beater until they begin to form stiff peaks.
For this step you'll need:
- 4 Egg white(s) (free range)

Add the sugar a little at a time and keep whisking until the mix is stiff and forms peaks that hold their shape.
For this step you'll need:
- 225g Unrefined golden caster sugar

Now gently fold in the chopped strawberries.
For this step you'll need:
- 500g Strawberries fresh, chopped

Spoon about 20 small portions of the meringue onto 2 baking sheets and bake for about 2 hours or until they are crispy.

Allow to cool in the oven.

When fully cooled, sandwich the meringues together with whipped cream and dust with icing sugar.
