For the calzone
- 400 g Strong white bread flour
- 25 g Unrefined golden granulated sugar
- 1 Easy bake yeast sachet (7g)
- 1 tsp Sea salt
- 2 Egg(s) (free range)
- 100 g Butter melted
- 225 ml Milk lukewarm
- 2 Pear(s) Peeled and cut into small cubes
- 150 g Stilton cut into small squares.

If mixing by hand, put the flour, salt and sugar into a bowl and sprinkle on the yeast. Mix to a soft dough with the eggs, milk and melted butter. Alternatively but all of these ingredients into a mixer with a dough hook attached.
For this step you'll need:

Turn onto a floured board and knead for 10 minutes, or knead for 5 minutes if using a dough hook.

Roll the dough out to a large circle.

Place the cheese and pears in the centre, wet the edges and flip one half of the dough over to form a semi circle, seal the edges and brush with egg.
For this step you'll need:
- 150g Stilton cut into small squares.
- 2 Pear(s) Peeled and cut into small cubes
- 1 Egg(s) (free range)

Leave to prove until doubled in size.

Bake at 190°C (fan 170°C, gas mark 5) for 30 minutes.
