Ingredients
- 200 g Unrefined golden caster sugar
- 400 ml Water
- 4 Mint leaves
- 2 Lime(s) zest and juice
- 25 ml Rum
- 1 tbsp Unrefined dark muscovado sugar

Put the caster sugar and water into a saucepan over a medium heat, stirring until the sugar dissolves.
For this step you'll need:
- 200g Unrefined golden caster sugar
- 400ml Water

Add the mint leaves, stir until the syrup starts to boil, reduce the heat and simmer for 5 minutes.
For this step you'll need:
- 4 Mint leaves

Remove from the heat, cover and leave to stand for about 15 minutes.

Strain the syrup mixture into a large bowl (removing the mint leaves).

Add the lime juice, rum and lime zest and stir. Then add the muscovado sugar and stir until dissolved. Pour into a shallow plastic container.
For this step you'll need:
- 2 Lime(s) zest and juice
- 25ml Rum
- 1 tbsp Unrefined dark muscovado sugar

Chill in the fridge for about 4 hours or overnight.

Churn in an ice cream maker according to manufacturer’s instructions OR put in the freezer and stir every hour until frozen, this should take about 4 hours.
