Ingredients
For the overnight sponge
- 1 tsp Easy bake yeast
- 150 g Very strong wholemeal bread flour
- 1 tsp Salt
- 100 ml Water warm
For the loaf
- 245 ml Water warm
- 1½ tbsp Vegetable oil
- 2 tsp Salt
- 1 tbsp Honey
- 250 g Seed and grain white bread flour
- 100 g Very strong wholemeal bread flour
- 1¼ tsp Easy bake yeast

For the overnight sponge, mix the ingredients together into a smooth dough.
For this step you'll need:
- 1tsp Easy bake yeast
- 150g Very strong wholemeal bread flour
- 1tsp Salt
- 100ml Water warm

Cover the bowl with a tea towel and leave to ferment for 2 hours. Then cover with film and place in the fridge overnight.

The next morning, remove the overnight sponge from the fridge 30 minutes before you want to start making your loaf.

Put the ingredients for the loaf , together with the overnight sponge,  into the bread maker baking pan in the order specified for your particular model (see manufacturer’s handbook).
For this step you'll need:
- 245ml Water warm
- 1½ tbsp Vegetable oil
- 2tsp Salt
- 1 tbsp Honey
- 250g Seed and grain white bread flour
- 100g Very strong wholemeal bread flour
- 1¼tsp Easy bake yeast

Set to the wholemeal rapid/rapid program for the appropriate size loaf.
