- 125 g Unrefined light muscovado sugar
- 1 Orange zest from 1 orange
- 1 Orange juice from 1 orange
- Cloves a few
- Cinnamon stick(s)
- 1 Star anise
- ¼ Nutmeg freshly grated
- 1 tsp Vanilla bean paste
- 2 Red wine bottles
- 50 ml Cointreau or brandy
- 150 g Frozen fruit winter fruits

In a large heavy based pan, add the orange, light muscovado sugar, spices, vanilla and add one bottle of red wine. Heat gently, stirring once or twice, until the sugar has dissolved, then continue heating gently for another 15 minutes.
For this step you'll need:
- 1 Orange zest from 1 orange
- 1 Orange juice from 1 orange
- 125g Unrefined light muscovado sugar
- Cloves a few
- Cinnamon stick(s)
- 1 Star anise
- ¼ Nutmeg freshly grated
- 1 Red wine bottles

Stir in the rest of the wine, Cointreau or brandy, vanilla bean paste and fruits, and gentle simmer for another few minutes. Serve in heatproof glasses.
