Ingredients
- 225 ml Warm water
- 250 g Strong white bread flour
- 100 g Very strong wholemeal bread flour
- 100 g Country grain bread flour
- 1 tsp Sea salt
- 50 g Honey
- 25 g Butter (unsalted)
- 1 Easy bake yeast sachet
- 50 g Unrefined golden icing sugar
- 100 g Sultanas
- 2 tbsp Cinnamon ground
- 2 tbsp Apricot glaze

Put the ingredients into the bread maker baking pan in the order specified for your particular model (see manufacturer’s handbook).
For this step you'll need:
- 225ml Warm water
- 100g Very strong wholemeal bread flour
- 100g Country grain bread flour
- 1tsp Sea salt
- 50g Honey
- 25g Butter (unsalted)
- 1 Easy bake yeast sachet

Set to the dough program.

Once the dough cycle has been completed, remove from the bread machine bucket and roll the dough into a large rectangle.

Sprinkle the sultanas, cinnamon and icing sugar evenly over the dough.
For this step you'll need:
- 100g Sultanas
- 2 tbsp Cinnamon ground
- 50g Unrefined golden icing sugar

Roll up the dough like a Swiss roll then cut into 12 slices (pinwheels).

Place onto a greased baking sheet, cover loosely with oiled cling film and leave to prove until double in size.

Preheat the oven to 190°C/fan 170°C/Gas Mark 5.

Bake for 20 minutes and serve, brushed with apricot glaze.
