- 250 g Very strong white bread flour
- 25 g Unrefined golden caster sugar
- 1 tsp Easy bake yeast
- 1 tsp Salt
- 25 ml Milk (whole)
- 2 Egg(s) (free range)
- 75 g Butter (unsalted)
- 100 g Milk chocolate chips

Place the flour, sugar, yeast and salt in the bowl of an electric mixer and add the milk and eggs. Stir well to make a soft sticky dough.
For this step you'll need:
- 250g Very strong white bread flour
- 25g Unrefined golden caster sugar
- 1tsp Easy bake yeast
- 1tsp Salt
- 25ml Milk (whole)
- 2 Egg(s) (free range)

Cut the butter into tiny cubes and add a little at a time to the dough, leaving the food mixer running until all the butter has been mixed in. Then stir in the chocolate chips.
For this step you'll need:
- 75g Butter (unsalted)
- 100g Milk chocolate chips

Turn the dough out on a well floured work surface and divide into 8 x 75g portions. Shape each into a fat sausage and place on an oiled baking tray. Cover with oiled cling film and leave in a warm place until doubled in size.

Preheat the oven to 200°C (180°C fan, gas mark 6). Once the oven has reached temperature, bake the brioche for 15-20 mins or until golden brown and they sound hollow when tapped underneath. Allow to cool. These are best eaten within 1 day or toasted the day after.
