- 1 tbsp Olive oil
- ½ Onion(s) chopped finely, a cup of
- ¼ tsp Pepper fresh, ground
- 1 tbsp Garlic clove(s) minced
- 450 g Strong white bread flour
- 3 tbsp Unrefined dark muscovado sugar
- 2 tsp Baking powder
- 1 tsp Sea salt
- 115 g Monterey jack cheese grated
- 350 ml Beer
- Oil spray, for cooking
- 2 tbsp Butter (unsalted) melted

Preheat oven to 190°C (170°C fan, 375°F, gas mark 5)

Heat oil in a frying pan over medium heat, and fry onions for 10 minutes until brown, stirring occasionally. Stir in pepper and garlic cook for 1 minute.
For this step you'll need:

Combine flour, sugar, baking powder, and salt in to large bowl. Using a whisk; make a well in center, add onion mixture, cheese and beer to flour mixture, stirring just until moist.
For this step you'll need:
- 450g Strong white bread flour
- 3 tbsp Unrefined dark muscovado sugar
- 2tsp Baking powder
- 115g Monterey jack cheese grated
- 350ml Beer

Spoon the mix into a well greased loaf pan and drizzle 1 tbsp of melted butter over the top.
For this step you'll need:
- 1 tbsp Butter (unsalted) melted

Bake for 35 minutes. Drizzle the remaining butter over the loaf and bake for an additional 25 minutes or until golden brown and a toothpick comes out clean when inserted in the centre. Let the loaf cool for 5 minutes then turn out of the pan and on to a cooling rack.
