- 1 tbsp Sunflower oil
- 1 Onion(s) medium, finely sliced
- 500 g Very strong wholemeal bread flour
- 1 tsp Cream of tartar
- 1 tsp Salt
- 1 tsp Bicarbonate of soda
- 1 tsp Unrefined golden caster sugar
- 300 ml Milk (whole)
- 150 g Natural yoghurt
- 1 tbsp Sage leaves chopped
- 75 g Cheddar cheese grated

Heat the oil in a pan, then fry the onion until soft and golden brown then set aside.

Preheat oven to 190°C (170°C fan, gas mark 5).

Mix together the flour, cream of tartar, salt, bicarbonate of soda and sugar in a large bowl and make a well in the centre.

- 1tsp Salt
- 1tsp Bicarbonate of soda
- 1tsp Unrefined golden caster sugar

Whisk together the milk and yoghurt, then pour most of it into the well.
For this step you'll need:
- 300ml Milk (whole)
- 150g Natural yoghurt

Add the onion, sage and cheese and mix with a wooden spoon to give a soft but not wet dough, adding the remaining milk and yoghurt mixture, plus a little extra milk if necessary, if the dough is too stiff.
For this step you'll need:
- 1 tbsp Sage leaves chopped
- 75g Cheddar cheese grated

Turn the dough out on to a lightly-floured surface and flatten into a round about 4cm (1½ inch) thick.

Place on a greased baking sheet and cut a cross in the top using a floured knife.

Bake in preheated oven for 45 minutes.

Slide the loaf off the baking sheet and wrap in a clean tea towel to keep it soft.
