For the pancakes
- 3 Egg(s) (free range)
- 230 ml Milk (whole)
- 160 g Plain white flour
- 2 tsp Sea salt
- 20 g Butter (unsalted)
For the filling
- 4 Banana(s)
- 4 tsp White caster sugar
- 20 g Butter (unsalted)
- 40 g Pecan nuts toasted and crushed
- 4 Ice cream vanilla, scoops, to serve

Break the eggs into a large bowl and whisk. Then whisk together with the milk, salt, flour and a large melted knob of butter
For this step you'll need:
- 3 Egg(s) (free range)
- 230ml Milk (whole)
- 2tsp Sea salt
- 160g Plain white flour
- 20g Butter (unsalted)

Fry the pancakes in a large frying pan, tossing occasionally until they are golden on both sides.

Heat another pan and sprinkle in the sugar. As it starts to caramelise, add the bananas, shake around for a few minutes and then add the butter.

- 4 Banana(s)
- 20g Butter (unsalted)

Spoon the buttery sauce on to the pancakes, add a dollop of ice cream and sprinkle with the pecans. Roll up and devour.
