HOW TO BAKE JAMAICAN CORNMEAL PUDDING

On the stove top into a pan
2 1/2 cups of coconut milk
2 1/2 cups of water
1 1/2 stick of butter
1 tablespoon of vanilla
1 1/2 cup of sugar
Allow butter to melt.
In a bowl add:
3 cups of cornmeal
1 cup of flour
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 teaspoon salt
Then combine wet and dry ingredients
Topping ingredients:
1/4 cup brown sugar
3/4 cup coconut milk and 1 tablespoon cinamon
Pour mixture into grease baking pan. Should have enough for two pans.
Combined 2 ounces of raisins sprinkled with flour. This helps to prevent raisins from sinking to the bottom of pan.
Remove raisins from flour and put raisins into each baking pan.
Bake on 350 degree for 15 minutes
Add topping ingredients to each pan
Bake for 1 hour
Allow pudding to cool for 15-30 minutes, serve and enjoy!
