GRATED SWEET POTATO PUDDING JAMAICAN STYLE

Sweet Potato Pudding

2 1/2 pounds of grated Jamaican sweet potatoes
1 cup flour
1/2 cup cornmeal
1 1/2 cup brown sugar
1 ounce of raisin soak in 2 tablespoon of Jamaican white rum
1 tablespoon of butter
1 teaspoon salt
2 cups of coconut milk
1 teaspoon nutmeg
2 teaspoon of cinnamon
2 tablespoon of vanilla

Toping ingredients
2 tablespoon of brown sugar
1/2 cup coconut milk
1/2 teaspoon cinnamon

Bake on 350 degree oven for 1 hour 30 minutes
Add topping ingredients then bake for an additional 20 minutes.
Let stand for a minimum of 15 minutes then cut and serve.
Store remaining pudding in refrigerator
