Ingredients
- 1⅛ kg Cherries stoned
- 120 ml Water
- 3 tbsp Lemon juice
- 1½ kg White granulated sugar
- 250 ml Apple pectin

Simmer the cherries in the water and lemon juice in the covered pan for 15 minutes.

Add the sugar and heat gently, stirring occasionally until the sugar has dissolved.
For this step you'll need:
- 1½kg White granulated sugar

Bring to a full rolling boil and boil rapidly for 1 minute

Stir in the apple pectin and continue boiling for 1 minute.
For this step you'll need:
- 250ml Apple pectin

Remove from the heat, skim if necessary, cool slightly, pot and cover.
