1. Let prime rib reach room temperature uncovered. About 3 hours.
2. Preheat oven to 500 degrees.
3. Put meat thermometer in thickest part in the center and add to roasting rack.
4. Mix together coarse sea salt, red pepper flakes, peppercorns, fresh rosemary, fresh thyme, minced/pressed fresh garlic.
5. Add olive oil.
6. Stir.
7. Rub prime rib with mix.
8. Add to oven, uncovered, for 20 minutes.
9. Reduce temperature to 300 degrees.
10. Cook until temperature reaches 125 degrees.
11. Remove from oven and let rest for 30 minutes.
12. Carve and enjoy!
